Participants joined me for another cooking adventure. This time: Potato Chowder with Cream cheese and Bacon with Roasted Carrot and Avocado Salad presented by Mary-ann. If you cook along, you need the following:

·      4 to 5 cups of water

·      8 cups of diced potatoes Yukon gold or red skinned about 4 pounds

·      2 envelopes Lipton Onion soup mix

·      2 8-ounce packages of cream cheese cut into small cubes

·      1 pound bacon cooked and crumbled or chopped.

·      1 lb. carrots, peeled and cut into 3-inch segments.

·      2 garlic cloves chopped

·      1 shallot, sliced thin

·      1 tbsp fresh thyme leaves or ½ tbsp dried

·      1/4 tsp ground coriander

·      Kosher salt

·      Freshly cracked black pepper

·      1-2 large avocado, peeled and cut into wedges

·      3 cups mixed baby greens

·      1/3 cup extra virgin olive oil

·      5 tbsp orange juice

·      2 tbsp Lemon juice

·      1 tbsp red wine vinegar

·      1 tsp red pepper flakes

·      1 to 2 tbsp honey

·      1/2 cup of Feta cheese

·      2 tbsp toasted sunflower seeds

·      2 tbsp toasted sesame seeds

Everyone joined for a deliciously fun cooking session where they were guided step by step through a cozy chicken and vegetable casserole—loaded with tender chicken, vibrant veggies, hearty rice, and finished with melty cheese and crispy onion rings. Attendees brought their appetites and favorite aprons for laughs, tips, and a dish that was comfort in every bite.

The following ingredients were needed:

1 large can chicken or 2 cups cooked, shredded chicken, 1 15 oz. can mixed vegetables, such as Veg-All, 1 10 oz. can cream of chicken or cream of mushroom soup, 1 cup water, 1 cup minute rice, 2 cups shredded cheddar cheese, 1 small can French fried onion rings (not frozen onion rings), salt & pepper to taste.

Please bring an ornament to hang on our virtual tree and be prepared to describe both the ornament and its significance. Is it handmade or a family heirloom, big or small, made of paper or tin, shiny or sparkly, and does it light up or play music? The lights and garland are already in place. We just need the ornaments and to plug the lights in. And you will want to be there to learn who is chosen to place the star atop the tree!

Participants joined me for another cooking adventure. This time: Quiche and Cornbread with Guest Sharon. If you cook along, you need the following:

Quiche Ingredients:

One unbaked 9inch deep pie crust,

Aluminum foil

pie weight such as dried beans or dried rice for baking.

Custard filling ingredients:

4 Eggs

1 and 1/3 Cups Half and half-you can substitute whole milk-Do not use skim milk.

Salt and fresh pepper to taste

Filling ingredients:

Eight strips bacon or cubed ham

1 and 1/3 Cups Shredded cheese

Fresh or dried chives to garnish

If you make a second quiche, substitute bacon for spinach. Second quiche filling:

1 1/3 cup chopped and spinach-dried thoroughly cooked.

One and 1/3 cup cubed smoked Gouda cheese.

Participants joined me for another cooking adventure. This time: Honey Mustard Chicken and Potatoes. If you cook along, you need the following:

·       4 bone-in, skin-on

·       chicken thighs

·       One ½ pounds baby potatoes-halved

·       Two tablespoons of olive oil

·       1 teaspoon garlic powder

·       Salt and black pepper-to taste

·       Chopped fresh parsley- (optional for garnish)

Honey Mustard Sauce:

·       ¼ cup Dijon mustard

·       2 tablespoons of whole grain mustard

·       3 tablespoons honey

·       2 tablespoons of olive oil

·       1 tablespoon apple cider vinegar

·       2 cloves garlic-minced

·       Salt and pepper-to taste
